Curd rice or dahi chawal

After having heavy lunch or while we are travelling this dish is so soothing and convenient to make and serve.



                     



                                                       


Ingredients

1 cup rice
3 cup milk
1/2 cup curd
2 teaspoon salt or according to taste
For seasoning

  2 Teaspoon mustard seeds
   2 teaspoon jeera (cummin seeds)
   2 teaspoon. Urad dal  (white without skin)
    4 pieces of dried red chilli
     2 tabspoon oil
     8 leaves of curry patta

Wash rice and drain extra water.In a pressure cooker pour 3 cup water and add rice and salt and stir well. Cover and cook till two whistles.After 10 minutes open the cooker .Transfer the rice in a bowl.Now add 2 and half cup of milk  and yogurt. Mix well .Now in a seasoning pan pour oil heat it and add all the seasoning ingredients.When these start spluttering pour over the rice and cover.After few minutes remove the cover and mix the seasoning.Cover the bowl and let it rest for 3. 1/2 hours in summer and 5 hrs in winter till the milk has converted into yogurt.
Curd rice is ready to serve.

Tips.

While travelling cook the rice before hand but mix the milk and curd at the start of journey.
By the time of dinner curd rice will be ready without turning sour.

Cake in microwave







                                                                 
Microwave is an appliance which is mostly used to reheat the cooked food kept in refrigerator.
But with few changes in recipe it can be used for cooking and baking also.
Here is the recipe for an eggless cake baked in microwave.
Ingredients

1 cup all purpose flour(maida)
1/4. Cup butter
2 table spoon ghee or oil
1/4 cup malai or creame
60 gms powdered sugar
1/2 teaspoon baking soda
1/2 teaspoon  baking powder
1/4 cup milk powder
3/4 cup milk
2 tabspoon  dry fruits chopped
2 tabspoon tuty fruity
1 teaspoon. Vanilla essence
        Mix maida ,baking powder and baking soda and pass through a sieve two times.
                               In a bowl mix milk,milk powder,sugar powder and ghee ,butter and creame.Now start adding maida slowly to the liquid mixture made by mixing milk butter etc.Stir gently in one direction,When it is done then add vanilla essence and dry fruits.Transfer this dough in a microwave safe bowl and put in microwave.Bake for 9 minutes and check by inserting a knife into the cake.If the knife comes out clean then the cake is ready.Take out the bowl from microwave and let it cool for 15 minutes.Now with the help of spatula try to remove the cake from the sides of the bowl.Cover the bowl with a plate slightly bigger then the bowl.Now turn the bowl upside down on the plate.

Transfer the cake on a wire rackfor few minutes so that it gets enough air to remove the extra moisture and prevents the cake from becoming soggy.

Tips:  1  Dough for microwave baking should be of  slightly loose consistency then ordinary baking,
          2  Too much of stirring should be avoided while mixing maida to liquid mixture.
