Stuffed tomato

Potato and tomatoes are the essential items of our grocery list.These two can be mixed and blended with any dish while cooking.But in this particular recipe these two will be mixed to make this special sabzi.
Ingredients required

6 medium size red tomatoes(fresh and firm)
3 medium  size potatoes
2 teaspoon of red chilli powder,dhania powder,amchur powder.
1 teaspoon of turmeric powder

1 teaspoon of cummin seeds
A pinch of hing (asafetida)
4 table spoon of yogurt
2 tablespoon oil
1 tablespoon of finely chopped ginger,green chilli,mint leaves,coriander leaves.
Salt according to taste.

Boil potatoes and peel and mesh.     Mix all spices and salt in mashed potatoes except hing and cummin seeds.In a thick bottomed or non stick pan heat oil add cummin seeds and hing and potatoes.Switch off the flame stir the mixture and let it cool.
Now  with a knife or scoop take out the juice and pulp from tomatoes to make these hollow so that these can be stuffed with this potato mixture.Stuff all  these hollow tomatoes with potato mixture.

In a non stick pan heat oil add hing and cummin seeds and pour yogurt and juice taken out of tomatoes let it boil then gently place tomatoes in this gravy and cover the pan with a lid.Let it simmer for 8 to 10 minutes.switch off the flame and open lid after 5 minutes.Garnish with mint and coriander and mint leaves.

Tastes good when served with roti ,paratha or puri.

Brugges the Venice of north west Europe

A small town of canals and chocolates this was my first impression of this place.Being born and brought up in desert area of Marwar (rajasthan) I am always fascinated by greenery and water bodies.
Tourists from all over the world come to rajasthan to visit sand dunes in desert but I have appreciation
for lakes canals and gardens .When we reached to Bruges after driving for one and half hour from Brussels (Belgium) I had no words to describe the beauty of this place.
This whole town is full of canals with beautiful houses at the sides of these canals.Cobblestone streets
gives the feel of ancient place.One can see lots of historical buildings.
This place is famous for its chocolates,tapestry and laces.

This town is so much touristic that all the restaurants in market place is always crowded.Do not get surprised if you have to wait for your turn into a restaurant.
One can see buildings and houses as old as 15th century. A ride of horse driven cart makes Bruges all the more interesting.

As this place is at the sea shore so it was an important port for the transportation of goods from eastern europe.Once  Bruges was considered as main commercial city in the world. The concept of share trading originated from this place in early 17th century.this place has been a UNESCO world heritage site since 2000.

Sugar free mewa(dry fruits ) burfi

                                                                                 


Too much sugar is not good for our health.Now a days many people are having diabetes and have to restrict sugar in their diet.But we have taste buds which makes it difficult to control eating sweets 




With  this recipe one can enjoy sweet taste without risk of increasing sugar level in their blood
as the sweetening agent used in this dish is dates .



Ingredients required

Dates.   350 gms
Almonds.  50 gms
walnuts  50 gms
pistachio. 50 gms
Figs  4 piece
   Cashews.  50 gms


Deseed all dates and cut into small pieces.In  a pan dry roast all the dry fruits for 1 or 2 minutes so as to remove moisture from these..Chop all the dry fruits into small piecesPlace  a non stick or thick bottemed pan on burner and put all the chopped dates and start stirring on slow flame 
these dates will start melting and turn into a sticky mass.Keep on stirring with some pressure to melt these evenly.
When this is  done then add all the dry fruits into it and mix well.Try to mix all the ingredients and turn it into a sticky mass enough to turn into a crispy pieces after cooling.Grease a plate with ghee and spread the mixture on it.When cooled cut into desired shape.
