      Poha with  Vegetables



         Poha as a breakfast or tea time snacks is very common and loved by all.
Preparation is so simple and all the ingredients are easily available in Indian home,s pantry.
As it does not need any kind of deep or shallow frying so it is perfect for weight watchers.
Ingredient required

Poha   1 cup
medium sized potato      1(peeled and diced in small pieces)

 ground nuts       4 tabspoons

green chilli  finely chopped  1
lemon juice         1 tea spoon
Curry leaves

coriander leaves  finely chopped
mustard seeds       1 tabspoon
cumin seeds          1 teaspoon

Finely chopped cabbage.tomatoes,cauliflower,2 table spoon of each.
green peas 1/4 cup
oil     2 tab spoon

  Take poha in a strainer and wash it in running water and soak it for five minutes,Add salt and turmeric in it and mix it gently.
in a pan put oil and when it is hot add mustard seeds and cumin seeds.Stirr and add potatoes let it saute it for 4 minutes and add all vegetables including peas, and stir,Saute again for next 2 minutes till you see potatoes are tenderAdd 1/2 teaspoon salt ,Now add soaked poha and mix well ,
Add green chillies ,curry leaves and lemon juice and mix  gently so that poha does not get mashed,

Garnish with coriander and it is ready to serve,Any kind of fine sev will enhance the taste.
